This morning I made the Stir n Roll Biscuits. My son ate quite a few – surprising, since he only eats the food the daycare makes – #winning!

The recipe was super simple! I was a bit surprised the recipe called for vegetable oil when most biscuit recipes call for shortening or butter. I figured I should stick to the recipe since I’d never a) made this recipe and b) used vegetable oil when making biscuits. I made several sizes to keep things fun for my son – he ate all but one of the small ones (one was my sample biscuit). They weren’t bad – I may have over-kneaded them, they were slightly tough, but tasted just like a biscuit. I still prefer the result from shortening or butter – I get a lighter, fluffier biscuit. Overall, I’d say this recipe is a keeper in a pinch!
