Today was a day for doughnuts!! Super simple recipe – only had a few questions with the recipe. Step one states to beat the ingredients with an electric mixer on low speed – is that handheld or stand? I used my Kitchen Aid stand mixer with the paddle attachment with built in scraper. Seemed to do the trick! I can’t imagine standing there with a handheld mixer, but if it’s all I had, I’d make do.

Any who, I mixed everything up before anyone else got out of bed so when they did finally wake from slumber, we could get to fryin’! My son was all about cutting the doughnuts out and then got distracted about halfway through the process – I get it, if I was 4 and didn’t get a doughnut immediately, I’d be out, too! The recipe says to use a well-floured cloth-covered surface – that really helped to keep the flour contained and made for easy cleanup. I think my first batch was too thin, but that just meant they cooked quicker and I could eat a doughnut faster!

I’m not really big on setting up the whole fry scenario – it’s messy, smelly, and I’m never sure what to do with the oil. So, I usually don’t fry foods. I figured this was worth a try – so, I poured vegetable oil in my trusty 3 ½ quart dutch oven and attached my candy thermometer. I don’t even know how long I’ve had the thermometer, but glad I remembered I had it and glad it finally got some use. Once the temp got to 375 F, it was time to make the doughnuts – come on, that’s funny!
