Hello Saturday!! Thanks to my dog, Phoebe, I was up at 6:30 this morning and it seemed that once I drifted off into a nice slumber, my son decided he needed to join me on the couch around 7. I get it, I needed to be up – so, I got up. This morning called for the Velvet Crumb Cake and bacon – of course!!

Not sure why I distanced myself from Bisquick for so long. Why not use something that has all the ingredients measured to the exact amount and all you need to do is add a liquid, an extract, or an egg or two – easy peasy!! Apologies to Bisquick – I’ve proven to myself that I can make pancakes and waffles from scratch, but why on earth would I do that when you’ve taken a lot of the measuring and need for a ton of ingredients on hand, out of the equation. Thank you!!

I digress… so, back to the crumb cake. In my head, I saw coffee cake – I think it was the dreamy pic in the cookbook. It wasn’t bad (my husband had 2 pieces at breakfast and another after dinner), but man, could it be even better! First, I should have checked the cake at 25 minutes – 30 minutes was a tad too long in my oven. I’ve had my double ovens for about two years now and we’re still getting to know each other. Next, the topping, I would add more and the addition of crispy bacon would put this thing over the top!! Next time…
