April Fool’s Day – not very apropos anymore – 2020 kind of did a number on us all! For tonight’s dinner, I decided to go rogue and do my own thing! I bought some tuna steaks from Sam’s last month, individually packaged and sealed them with my handy-dandy Foodsaver and put them in the freezer. I thawed them in the refrigerator overnight – when I was ready to use them, I patted them dry, then dusted them with Kosher salt and freshly ground black pepper, then I rolled them in ground pecans – I added a little avocado oil for some “glue”. I heated my cast iron skillet and seared the steaks – once I felt good about the toastiness of the pecans, I put them in a dish and set them in the toaster oven on warm. Next up was the Garlic Couscous – Far East is quite tasty and quick! Toss in a side of steamed broccoli and voila, you’ve got a tasty meal!
