In September/October 2019 Todd, my husband, decided to try the Keto diet. New recipes, and new dishes to try?? Why, challenge accepted! Note that while I say he decided to try the Keto diet, I attempted and didn’t make it past the first month. I like the recipes, there are some really tasty creations out there, but I also like a more rounded meal. Probably why I’m still a little round – Ha!

Tonight seemed like a good night for the Cheesy Sausage-Cauliflower Soup recipe I found in The Keto Diet magazine. It calls for chicken andouille sausage – I didn’t have that, I had the Zatarain’s Andouille sausage I picked up in bulk at Sam’s. I wasn’t making this recipe to keep in line with the caloric info noted, I was making this recipe because I had all of the ingredients, the way I like them, to make the soup. I know cauliflower is all the rage right now, rightfully so, it is a very versatile item and can stand on it’s own or take on the flavor of something else.

The first time I made this recipe, I followed it to a “t”, after all, we were attempting to adhere to the actual diet. Since the first time, I decided to make a tweak or two.  After I rendered the sausage, I added my favorite Kroger Cajun Style Mirepoix Blend. Seemed fitting with the andouille.

After using my handy-dandy immersion blender to smooth it all out, it was ready to eat and hit the spot!
