Change is good and is possibly on the horizon – no time for cooking tonight! Remember that Spring Creek BBQ? Me, too! BBQ Chicken, meet Chicken Salad – that’s what’s for dinner! I took the chicken off the bone, mixed Hellman’s mayonnaise, Private Selection Dijon mustard, Spring Creek BBQ Sauce, chopped pecans and diced Fuji apple with the pulled BBQ chicken, toasted some Honey Wheat bread, spread half of an avocado on both pieces of bread and dinner was served. Fancy, no, tasty, yes!
