Today I needed comfort and ease in a meal. It was a tough and emotional day. Two of the children that attended our son’s school passed away. The details of the story are sad and heartbreaking. Sometimes happenings in the world really make you question things and I didn’t need to think about what we were going to eat. Todd was cool with leftover crawfish etouffee and the confectionary delight of his pie. Me on the other hand just needed something that didn’t require any thought – enter my turkey taco meat. I’ve been making big batches of this for years. I freeze ½ cup portions and take out a portion to use for a salad or nachos. Here’s what I do:

Brown ground turkey meat – I use Jenny-O 93% lean – once cooked through, I add a lot of chili powder, ground cumin, onion powder, garlic powder, dried oregano, Kosher salt, and ground black pepper. Once the spices are in, I cover the meat with chicken broth and let simmer until the liquid is almost gone. That’s it – done!

Tonight, I went for nachos disguised as a salad. We always have avocadoes- I pick them up every time we go to Sam’s – so guacamole is readily available. Kroger’s Simply Organic Blue Corn Tortilla chips were what we had in the pantry – I usually have those, Private Selection Blue Corn Tortilla chips, or Tostito’s Simply Organic Tortilla chips – depends on what’s on sale and if I have a coupon 😉Diced Roma tomatoes, diced cucumbers, chopped lettuce, salsa, and sour cream = DONE!
