Happy Heavenly Birthday, Don! Today we celebrate your life and legacy through your children and grandchildren. Plus, we get to eat a strawberry concoction in your honor!
My father-in-law and I didn’t get to spend too much time together before his passing in 2013. We’d visit during family events or while we were feasting on one of my latest creations – Lobster Bisque was pretty on-point! He was a unique man with a unique sense of humor and I enjoyed the fact that he attempted to search all corners of the area to find the perfect fried catfish restaurant for me – ranging from the Terrell TX Catholic Church Friday fish fry to a hole-in-the-wall off some random farm-to-market road in the middle of nowhere.
I wish he could have been here for our wedding and to meet our son – he would have had a blast with him! Dinosaur hunts would have been aplenty!
We talk about Papa Don often, so Reese has an idea of Daddy’s Daddy/his grandfather. Yesterday we talked about his love of strawberry pies. He referred to me as the pie lady and I searched high and low to find a strawberry pie recipe to fit the bill.
Today, I was going to make a strawberry pie, but I happened to be reading my emails while attempting to wake up and I came across a recipe for a Fresh Strawberry Coffee Cake – it hit the spot and I think Don would have approved!
So, here’s to you Papa Don – we celebrate in your honor today!
